Hidden Healthy Snacks for Picky eaters

I have GOT to do a better job with this. We so don't eat healthy snacks the majority of the time, and it is always an issue of convenience. And now I fear I have formed bad habits for my 3 year old. Help! How do I slip her the healthy snacks without HUGE amount of time!

Whole wheat pancakes with chocolate chips. You only need 2-3 to make
it a yummy treat that they will eat.
have them make their own snack- PB&J can be made by a 3 year old and so
often they like what they make more than if you make it.
put snacks in ice trays and allow them to 'graze' during the day or
have it be their dinner plate. it is a cool and interesting alternative.

Homemade granola - good for them and also provides an entertaining activity to do together. (I have a good recipe if anyone wants it).

Kiwi has been a hit in our house. I cut it in half and them let Hannah dig it out with a spoon. TJs has been carrying a bag of yellow kiwis that aren't fuzzy on the outside and really good.

Smoothies. Another snack that is great to involve them in the process of making it. I take a handful of frozen strawberries, half a banana, some plain soymilk (Costco now carries Organic plain soymilk), orange juice and a bit of vanilla. Blend and eat.

Another shake that is fairly good for you ... Chocolate soymilk, a couple spoons of peanut butter, half a banana and some ice. Blend and eat.

With my kids eating became an issue of control (especially for one stubborn unnamed daughter) and, therefore, they were picky just for control... So, we made a family rule that they could pick ONE item to not eat, but they had to eat everything else - no ifs, ands, or buts about it! I made sure the first few days to make foods I knew they liked. I always cooked 2 vegetables. That way if they picked one not to eat, they still had another. My kids will now rarely not eat something...
